Prawn Crackers

One snack that I really enjoy when I cook for a dinner party is Prawn Crackers. I have tried various imported makes of cracker, the best are the ones that you cook yourself and serve hot.
Aside from the fact that they are unhealthy I don't have them often because they're such a fiddle to cook. Each one has to be fried individually and removed at exactly the right moment. If you cook them too much or too little the result is hard bits that break the teeth.

I tried an easier way today, the microwave.
Place the cooking oil in a small bowl and dip each uncooked cracker in the oil, ensuring full coverage.
Arrange the oiled crackers on a microwave safe plate or dish so each has room to expand.
900watts for 1 minute worked for me. Each puffs up perfectly without the hard bits.
They taste a bit more erm....fishy, like the smell of a fish market but a good dipping sauce takes care of that issue. I've tasted worse anyway.
