Ready, Set....Cook

I have taken out my corned beef already to defrost. I will be starting to cook it around 8pm tonight. Why you ask? Every St Patricks Day I make 2 corned beef and cabbages. I cook one overnight in beer, wake up early to throw in the cabbage and potatoes, and send it with my husband to his job. Every year about 4 people make the corned beef at my husbands work. And to pat myself on the back, mine always gets the highest review.

Tomorrow afternoon is when I start my second corned beef and that one is for my family's dinner. This one is not done in beer because I really don't care for my corned beef cooked that way. This one is boiled in water with a bay leaf.

Yes I am a busy girl. LOL

How do you cook your corned beef?(if you even cook it at all)

I'm making mine on Saturday, we both have to work Friday night. Should be a busy night in the ER!!! All those happy drunks
