For all of the ladies who are too far away to come for dessert.

I sent this to [blog mizzkitka] and to _Safira the other day. It seemed that mizzkitka was having a chocolate crisis and well, I have always been good in a crisis.

Saf just deserved a break and I thought that this would be the way to go. If you are going to fuck up someone's diet, then don't fuck around: do it right.

But why be so parsimonious with something so good? I have so many friends on here, who are so far away, that I decided if I cannot cook it for you, then at least I can share the recipe and you can cook it and enjoy it and think about me.

Don't be put off by the word "souffle". It's really easy, it really is, trust me....

So-Easy Chocolate Souffle

PREP: 15 MINUTES BAKE: 12 MINUTES OVEN: 400[degrees]F

Nonstick cooking spray
Sugar
4 oz. semisweet chocolate, chopped
1/2 cup whipping cream
4 egg whites
2 Tbsp. sugar

1. Preheat oven to 400[degrees]F. Coat insides and rims of four
6-ounce ramekins with nonstick cooking spray. Sprinkle with
sugar and set on a baking sheet; set aside.

2. In a small microwave-safe bowl, combine chocolate and
cream. Micro-cook on 100 percent power (high) for 1 1/2 to
2 minutes or until smooth, stirring twice. Divide in half. Cover
and cool to room temperature,

3. In a medium mixing bowl, beat egg whites with an electric
mixer on medium speed until foamy. Gradually add sugar,
beating until soft peaks form (tips curl).

4. Gently fold half of the cooled chocolate mixture into the
beaten egg whites until combined. Spoon mixture into
prepared ramekins. Bake for 12 to 15 minutes or until a knife
inserted near the center of souffles comes out clean. Serve
immediately. To serve, use a spoon or knife to split open the
centers of the souffles; pour in remaining chocolate mixture.

Makes 4 servings.

sil, also try it with lemon juice and lemon zest mixed in with half the quantity of cream instead of the chocolate and use raspberry puree for the sauce. Another way is to mix orange juice/orange liqueur into the half quantity of cream and then use the chocolate sauce on the top.

CelticKarma, I do appetizers and main courses too. Everyone laughs about a guy who cooks but, if I don't cook for me, then who will? Nobody made a rule that said single guys have to eat poorly - even single English guys.
