Texas BBQ

I've been busy this weekend getting ready for a BBQ at our house. Nothing fancy, just some family and a few friends coming over. My husband is smoking the brisket, which he marinated last night and then used a rub on. An hour or two before the brisket is ready, the link sauages will go on the grill.

I am in charge of the side dishes which are coleslaw, pinto beans, deviled eggs and corn on the cob.

When I go out side my mouth starts watering at the armomas coming from the grill. I just hope it doesn't rain.

For those of you that are interested here is the recipe for the marinate and the rub my husband uses when he BBQs. After reading saintlianna's post about ketchup, I am very glad our recipe does not include ketchup

Marinate

4 cups of chicken broth or stock
5 tbls Whorchestershire Sauce
1/2 cup olive oil
1/2 of rub recipe

Pour over meat. Cover and refrigerate over night.

Dry Rub

1/2 Paprika
1/4 tsp black pepper
1/8 cup of salt
1/4 cup of sugar
1 and 1/2 tablespoons garlic powder
1 and 1/2 tablespoons cayenne pepper
1 and 1/2 tablespoons onion powder

The night before, massage the meat with 1/2 of the rub and then pour on marinate.Remove meat from frigerator and rub down with the rest of the dry rub making sure that it is covered well. Next brush 1/2 cup molasses over the top. Heat smoker to 200 degrees and add meat.

What are you doing today for the holiday? How do you BBQ where you live?

She came 4 times during dinner.I guess she liked em. I marinated my ribs in pineapple juice and then rubbed the ribs with a meat rub of 3 types of seasoning salts and a variety pepper seasoning. The whole neighborhood drove past my place yesterday.I t is torture smelling that aroma all day.

The Closer?..I happen to like that one a lot Dig. I like the part where they track down The Closer to his home and send a rocket right thorugh the middle of it.

I love ribs too but we chose brisket instead. The only problem we had was that it didn't get hot enough outside to sustain the heat in the smoker and we had to bring everything inside and finish it in the oven.

I hope the BBQ you went to was good.
