Damn I rock.

What do you get when you combine asparagus, Uncle Ben's seasoned long grain and wild rice, salmon, and fresh chopped herbs (rosemary, basil, and parsley)? You get DINNER!

Yum yum!

Not all mixed together like soup or something though, you know. I mean I used the water from cooking the asparagus in the rice pot (because it's chock full of flavor and vitamins), and I put the chopped herbs on the salmon, but that was about all of the mixing there was. Everything was normal and seperate.

And, in the tradition of my laziness about cooking lately, I cooked enough to have six servings of leftovers! Whoo-hoo! Granted, if the ex eats some, which she's welcome to, then it won't last all week. But that's fine because I also still have like eight to ten servings of that beef-noodle stuff I cooked up last week that I can defrost. So when it comes to cooking I can still be lazy all week long.

But it's cool eating healthy. I'm cutting a lot of fat. I'm making sure that each meal has a non-starch vegetable. I'm trying to keep the vitamin and fiber content up. And so even when I can't stick to my diet as well as I'd like (my diet is more about portion control and common sense healthy eating than calories or really counting of any kind) and I eat even two servings of dinner, it's all still healthy stuff.

And I'm saving money by cooking such big batches of food and putting the leftovers in the fridge (or freezer) as well as eating a hell of a lot better foods than I used to. And it tastes great!
