That's Good Eatin'

I like Memphis Barbeque

North Carolina style is too vinegary.
Texas? KC? I don't even know what they are.

The best ribs are made outdoors in a covered cooker, low and slow.
That is , at a low temperature for a long time.

If you gotta, you can cook em in the oven.

First, you need to get you a big-ass kettle and boil them ribs down. Simmer em for a good 45 minutes to get some of the fat off.

While the ribs is simmerin', make up your sauce.
Get you
1 1/2 cups ketchup
1/2 cup cider vinegar
fistfull of brown sugar
" dry mustard
" grated onion
one TBspoon minced garlic
" whatsdishere sauce
Two tblspoons horseradish
" fresh lemon juice
couple dashes of salt
little bitta butter

bring all that to a boil, then let it simmer for about fifteen minutes. Then let it just stand there so's the flavors can mingle around some.

I like to marinate the ribs in that overnight.
When you put em in the oven, do it at 325 degrees for about two hours.

Call me when they ready.

OH - cover em up with foil when you cook em in the oven.

If I thought anyone could find my house, I'd bey the ribs AND the beer and I don't even drink.

I hope I don't start an online barbecue war over this. I've been through those, and they aren't pretty.

Texas barbecue is beef. I grew up with Memphis barbecue, which is pork. Texas barbecue isn't bad, but it's not barbecue.

There, I said it. Ducking for cover now ...

I'm rather partial to kick-ass Kansas City Barbecue. Come to the cities and I'll take you down to the local purveyor....you might even get to liken' beer after too.
