The Only Merinade you will ever Need

Well, I've looked at an appetizer and a dessert, so I thought I should offer an idea for dinner.

This merinade works for almost any meat but I have found that Chicken seems to compliment the flavour best. By all means use any meat you want, heck, you may find a better combination than I have.

I will touch on the other portions of the dinner with other recipes but for now here you go.


The Only Merinade You'll Ever Need

1/4 cup Lemon Juice (fresh)
1 tsp Lemon Zest
1/2 tsp Hot Pepper Flakes
1/2 tsp Black pepper (fresh cracked)
1/2 tsp Sea Salt
3 Garlic Cloves
1/4 cup Parsley (fresh chopped)
1/4 cup Basil, Dill, Oregano (fresh - you can use a mix of all 3)
1/2 cup Olive Oil (extra virgin)

* Combine the lemon juice, lemon zest, hot pepper flakes, pepper and salt in a bowl and whisk until the salt is dissolved.
* Crush the garlic cloves and add with the parsley and herbs. Stir in the olive oil.
* Pour over top of your choice of meat and merinate in the refrigerator for at least 2 hours.

* One virtue of this merinade is it's freshness. You should use it within 1 to 2 hours of making.

* Times of merinating will vary depending on the meat. The 2 hours I have given is for chicken but reduce the time to 1 hour (max) for fish and increase it to 3 - 4 hours for beef.
