What is wrong with this Saag Recipe?


Saag Experiment #3!

Today's Saag experiment turned out much much closer than my other tries. In fact, it looks exactly like Saag...tastes like Saag! IT's SAAG!...but it is not the same as the restaurant. Something is missing, some extra spice or different oil or something. Still, this tastes close enough that I now consider myself able to make Saag.

Here is the recepie:
3 boxes frozen spinach (organic)
2 cups of free range chicken broth (you could use veggie broth for vegan)
1 organic tomato
2 tbs soy butter
1/2 yellow onion
5 cloves of garlic
1 tsb powdered ginger
tons of Balti seasoning
olive oil
2 chicken sausages (optional)

Put spinach and chopped up tomato in pan with chicken broth. Let simmer until spinach is no longer frozen. When all in a mass, put in blender/chopper and puree till it is a green sauce. (this took me 4 batches). Put back in pan, add butter, let simmer. In different pan, put in chopped garlic, onions, and spices. Saute in olive oil until onions are limp and starting to brown. Toss the onions into the chopper thing with a few spoonfuls of the soupy green spinach mix from the other pan. Blend till as pasty as possible. Put pasty green onion mix in the green pan. Cut sausages (cooked) into pieces and plop into Saag pan.Simmer until less watery. Serve over long grain rice.
