The Question Game, Part 2

I’m playing the question game again, where you get to ask me something and I have to answer truthfully. Some of you may recall that I have played this once before. I have decided to play it again for two reasons.

1) It’s fun for me to see what interests you. You learn about me through my answer and I learn about you through your question.

2) I have a number of new readers that didn’t play last time and probably don’t even realize that they missed a fun game.

So, without further ado, here are the rules:

You may ask me any one question of your choosing and I will answer it.

If I have answered it in a previous blog, I’ll answer it again here anyway.

If you post a question, and then look back over previous comment/questions left by others and see that some one else asked the same question, you may ask another, but please let me know in the comment why you’re asking the second one.

I will answer questions as they appear. I will stop answering questions on November 9 (Wednesday.)

Slide, I can't pick one of the two when it comes to eating them, but I like cooking Italian better. I am a little but out of practice these days because I haven't had the opportunity or equipment to cook in recent months, but I used to make a fantastic lasagna. I can share the recipe, but I am afraid it is one I figured out on my own, and I can't list exact measurements because I don't use them.

I cook the sauce from scratch.

I start with fresh tomatoes, a combination of romas and super-tasties, if I can find them. I go about half and half with the two kinds. It usually takes about a pound and a half of each, sometimes two pounds of each. I dice them by hand (I like to use knives. I never use a food processor.) I throw them into the sauce pan over medium-high heat and let them start cooking down.

While the tomatoes are cooking, I work up the meat. I use veal if I can find it, but I usually have to settle for sirloin. I dice it and mix it with mildly spicy Italian sausage and brown it in a separate skillet with olive oil over low heat. I season it with a dash of fresh ground black pepper and a dash of Creole seasoning.

While all of that cooks, I dice 8 ounces of mushrooms (white or portabella, or a combination, doesn't really matter,) one medium sweet onion, one large green bell pepper, and 4 or 5 cloves of fresh garlic. I usually have to take the meat off the heat before I am finished with the dicing. I don't let it get too done.

Once I have it all chopped, I toss all of the veggies and meat in with the tomatoes. (Drain most of the oil and fat off the meat first.) I add in more fresh pepper, more Creole seasoning, and a few teaspoons of Italian seasoning. Depending on how spicy it smells, I may add a dash of cayenne pepper. I let it simmer for 10-15 minutes and then stir in some red wine. I prefer Chilean reds, usually a chianti or a merlot, and I can't say how much exactly, but I start with a full cup and go from there. I add it until the color and smell suits me. It has to be a uniform burgundy color.

I let it simmer and thicken for another ten minutes or so and then start the water for the noodles.

If the sauce is not thickening to suit me by the time the water boils, I add in some tomato paste to help it along. If it is too sweet, I add a few drops of lemon juice. The sweetness is often a problem when fresh tomatoes are used.

Once the noodles are done, I use olive oil to grease up my lasagna dish, usually a 9x13 pyrex. I put down a layer of noodles, and then I use a knife to spread ricotta cheese across the noodles. It is easier if the cheese is room temperature and the noodles are patted dry before they are put in the pan. I spread it with a knife because I don’t like the ricotta clumped. I like a thin, even layer. The sauce goes next, then a layer of shredded cheese. I like to get the bags of Italian blend, the ones that have mozzarella, provolone, parmesan, and asiago cheeses all shredded and mixed together. Then I lay done more noodles and repeat until the pan is full, ending with sauce and a cap of cheese.

I bake it at 375 degrees for 45-60 minutes (until the cheese is dark on top.) While it is baking, I make a salad if we are having one (not much of a salad man, myself,) and I get the garlic bread ready for the oven and set the table. When the lasagna is done, I take it out, put in the garlic toast, open a new bottle of wine, and serve the salad. The lasagna will have had time to cool and set up when the toast is done, and then it is time to FEAST!

Bulging, what are you talking about, mate? I already have breasts, and let me tell you, they are FANTASTIC! Since the surgery, I've had mirrors put up all over the house, and I just stay at home, walking around without my shirt, enjoying the site of my lovely titties. They are so perky!

Mandy, while I recognize and revere your status as a goddess, I cannot answer all three of your questions without upsetting the delicate cosmic balance that I strive to maintain in my blog. I will answer Question #3. Perhaps some one else will adopt your other two questions as their own, and they will be answered then.

What three things would I bring if I were on a private island with you for a week? I am assuming it is not a survival situation, since the time limit implies we can leave when we are ready to go.

I would expect one of two situations to occur: Either we would enjoy each other's company and would be perfectly capable of entertaining each other without needing items or distractions, or we would discover that we clash and can't stand each other. I have no way of knowing which case it would be. Since I would need nothing at all in the event of the first case, I would have to prepare for the possibility of the second case. When I consider the situation in those terms, my choice is clear. I would bring my laptop, my solar recharger, and ear phones, just in case you actually lived up to your blog handle!

5'r...thanks for the recipe. There's a few ingredients I wouldn't have thought of...but it does sound very good.

I would like to share a mexican recipe with you. Have you ever had "pan fried Taco's"? Usually refered to as "Patty Taco's".
Anyway...it's very easy and they are really good.

Start out with just enough cooking oil in a skillet..usually about 1/4 inch...or a little less. Let that oil get hot, but don't let it go that way for very long...then turn it down a tad.

For the meat...you can do several different things. You can use shredded beef, you can use hamburger, shredded chicken, pork..etc...(optional-hash brown potatoes). However if you use anything other than hamburger, you should go ahead and pre-cook it first. If you use hash browns...make sure they are almost cooked all the way. Mix the hash browns in with whatever meat you want to use, including the hamburger.

For this recipe we'll use just hamburger...depending on how many tacos you are making...a pound will be plenty for a dozen. Corn tortillas work better than flour for tacos.

Take a fresh corn tortilla, and pat the meat on half of it...but don't get it too thick...just about the thickness of a hamburger...or a little less is good. Sprinkle with any sort of seasonings you like. I use garlic & onion powder...sometimes I will open up a package of taco seasoning...and sprinkle a little of that on it...just for a little extra kick.

Carefully pick up the tortilla...and place it in the hot skillet..for just a second....and then fold the flap over the meat. Let that cook on 1 side until the tortilla is a nice golden/crisp color...then flip it over and do the same on the other side. Depending on the size of your skillet you can get anywhere from 4 to 6 taco's goin at once.

** if the oil in the skillet is too hot...and you get a lot of splatters/crackling...turn it down as much as you need to as long as it is still hot enough to fry...cuz you don't want it to get soggy **

They don't take too long to cook...maybe 10-12 min's. When they are done and you take them out of the pan...Let as much of the oil drip off...then place them on paper towels to absorb the rest. (Note..it sounds like they'll be really greasy.....but they aren't once you let them lay on the paper towels for a bit)

Then, garnish with whatever you like to put on 'em. I like to use the Mexican cheese blends that come already shredded.

These tacos...don't fall apart like other types...and the flavor of having been fried along with whatever meat you've chosen is just really, really good. Hashbrowns mixed in with it also give it a whole different flavor too.

I love lasagna...so I will try your recipe next weekend...I'll let ya know how it turned out. Thanks again.

Carebear, that is an excellent question, and I will answer it, but not here, not now. I need to give it some thought and answer it in a post of its own. I need to really think about it first.
