Funny how sometimes a greatest strength is also a big weakness.
My general approach to life, material things I buy, and strategies to games and such has been a “Swiss Army Knife” approach. I like things that can do many things. Give me my multi tool, and I can fix almost anything!
However I have taken this approach personally as well. I am knowledgeable in many things, but I have mastered nothing. Yeah I have a Degree in PE, but I also took a wide variety of classes with a minor in psychology. Undergrad work here is an introduction to many many fields.
The Swiss army knife approach works when taking to different people. I can hold a conversation with a football fan, baseball fan, card player, stockbroker factory worker, farmer ect ect. I can typically adapt to most situations and hold my own.
The problem is the same as the Swiss Army Knife has. It has a blade, but when you really need to cut, you bring out a heavy solid knife. When you eat you want a spoon or fork, not the funny little spoon or three prong fork that is too short. The scissors suck on Swiss army knives! Though it is better than nothing, but never the best.
The bit of this and bit of that philosophy kills my resume in many ways. Let say someone wants a fitness tester, and a fitness tester only. I have my one-year experience doing that, but only one year because I have a lot of other stuff listed. So as soon as someone with 5 years and more equipment comes in, boom I am toast.
My saving grace when I actually do get an interview, and the employer mentions that my resume is a bit “all over the place” I show how I can use the variety of things to return to smooth sailing when things go awry, and things will always go awry. Also all these abilities allow me personal skills to head off conflict, employers hate conflict.
I choose to be a jack-of-all-trades by observing nature. Specialists are often extinct faster than non-specialists. If an animal lives only in one habitat, or eats only one type of food, as soon as that is threatened, it is lights out. Rodents have been around as long as dinosaurs. They eat plants or meat, they swim, burrow or climb. No way could they bring terror that a dinosaur could, not in the same league when hunting with most dino-predators. How ever look who is still around. The exception is the shark, a dedicated predator, older than dinosaurs, and still here! Seem sharks and rodents could adapt to their climate change and find stuff to eat. Also I compared myself rats! LOL!
Seems natural that I would be leery of a specialist because they are going to over run me in one area. When I can’t call on other areas to counter, I am toast. I am not arrogant enough yet to figure I am going to out smart a competitor. I do assume I can out adapt them.
We are only going to have a limited amount of resource to use, a limited amount of knowledge, and a limited amount of ability. I just hope I used my limited resources the right way.

It's quite simple, really.
The better choice would be the person with varied experience.
Once you get the job, you'll gain more experience and you have the broad base to work from to deal with a variety of personalities.
But in the end -
it all depends on the person doing the interviewing.
I need to know why a person on a low carb diet regains weight when they resume normal eating habits.Does it have something to do with the muscle storing water? If you have any useful information or websites send me an email.

One of the many joys of word processing is that a resume can be spun to a specific position. Same jobs, same history, just angled to show the particular and relevant skills to the job applying for.|
So to honestly answer your question (as a former HR Dir) you are adaptable and will do fine. As long as the interviewer has enough sense to see it.

As a fellow "Jack of all trades", I agree that being adaptable outweighs any degree of focused specialization. I've always placed more emphasis on looking at the big picture rather than a few of the details. That way, you can see the similarities of all the details and how they all relate. Knowlege in one thing can always be applied to another, and the more things you know about, the more you know about all things. (was that too vague?...I tend to ramble...)|

My personal belief is that you should always go different routes for the life expirience as well as to see if there is anything of particular interest down that road. For the longest time I wanted to be a manager. But...once I tried my hand in assisting Mentally disabled and disabled bodied people, I found my calling. I never thought about that particular route...and on a chance...I ended up being a tutor. It was awesome. |

The specialist learns more and more about less and less until he knows everything about nothing
The generalist learns less and less about more and more until he knows nothing about everything
In my case, as an engineer, I lost some job finding power by being a generalist, seems most places are looking for someone who has a specialty. I like to think I have enough knowledge about most things that when the need comes up I can learn the rest of it to take care of things. Good Post!

I can't send you emails so here is what I have Off the top of my head I would say that returning to carbs is causing more water to be retained.
This is the book quote I used when making flyers about low carb, and normal diets.

I got it off the human kinetics website so it is reputable.
quoting her "For every gram of carbohydrate your muscles store, they store an accompanying three to five grams of water."
So with a pint of water being a pound it would not take much to add 3 or more lbs when not cutting out the carbs. Ladies get the lucky monthly water retentsion, so I am sure you female clients have came to you with a complaint or two.
