Chocolate Covered Strawberries

Chocolate dipped strawberries (or any other fruit, for that matter) are not difficult to make.

5 ounces bittersweet chocolate, chopped
1 pint fresh strawberries with leaves

In a microwave safe bowl, or in the top of a double boiler over simmering water, cook chocolate until melted. Stir occasionally until chocolate is smooth. Holding berries by the stem, dip each in chocolate about three-quarters of the way to the stem. Place, stem side down, on wire rack and chill in refrigerator until hardened.

(First, make sure the fruit is completely dry. Even a drop of water in the melted chocolate can cause it to "seize" and turn the entire mixture into a grainly mess.)

California Cheese Dip with Fresh Fruits

4 ounces cream cheese
2 tablespoons cream, or milk
3 teaspoons honey
3/4 teaspoon vanilla
1/16 teaspoon nutmeg, or mace
1/16 teaspoon cinnamon
3 teaspoons fresh lemon juice
2 tablespoons diced toasted almonds

Blend together all ingredients except almonds. Chill. When ready to serve place dip in small bowl. Top with almonds. Place bowl on plate and surround with assorted fruits such as banana slices, melon cubes, grapes, strawberries and peach or nectarine slices.

Makes 2 Servings.

good choices, it appears that both of these can be enjoyed naked (no plates required)
